Chef Louis Brown has 21 years of Culinary Experience throughout Louisiana. Chef Louis got his start with Copelands of New Orleans as a bus boy at 16 years old and became a Sous Chef 2 ½ years later. After Katrina Chef Louis became the youngest Executive Chef in the company history at 19 years old. Chef also spent extensive periods leading kitchens at Oceana Restaurant, Tulane University, and Legacy Kitchen as the Director of Culinary. Louis opened a restaurant in 2019 named Southern Charm Bistreaux and Bar which closed in 2021 due to the global pandemic. Chef Louis continue to develop his passion in Cajun and Creole Cuisine as well as learning a lot about Asian cuisine . Chef Louis passion for Hospitality goes beyond the kitchen. Chef Louis has extensive knowledge in service training and management. Chef has trained countless restaurants in New Orleans , Atlanta, and Dallas areas. In 2017 and 2019 Chef Louis was name one of Louisiana's Top 25 Chefs by the American Culinary Federation. Chef also is volunteers to teach youth at Heroes of New Orleans, a organization that works with youth using culinary. Chef Louis is also a board member of the American Culinary Federation New Orleans Chapter since 2020. Louis favorite motto is " The Recipe of Success is Passion".
